25 Simple Meal Train Dinner Ideas

This week I stepped out of my comfort zone and decided to make a meal for a friend whose husband had surgery. It was so hard to come up with a simple meal that didn't take much preparation or culinary skills, so I asked all my p-o-p community and you didn't let me down. You gave me the best ideas and I promised to share. So here is the amazing list of ideas:


Meal Ideas:

  6. Simple Rotisserie chicken, Mashed Potatoes, Veggies and Bag Salad

  7. Chicken Noodle Soup with bread

  10. Lasagna Tray - In Aluminum to decrease dishes (and no need to return)

  11. Roast Chicken with stuffing and salad

  12. Crack Chicken (in instant pot or crock pot)

  13. Mac and Cheese

  14. Diced potatoes with Shredded BBQ Chicken - and salad

  15. Fiesta Chicken Sliders

  16. Stuffed Baked Potatoes

  18. Chicken Spaghetti

  19. Chili

I actually ended up cooking a simple Chicken Fettuccine Alfredo with garlic bread (premade at the grocery store) A bagged Salad, and a Pie (from the grocery store. I like to include paper plates and throw away pans as well.


Below are a few recipes that were shared with me:



White Chicken Chili

1 Rotisserie Chicken

1 Med. Onion chopped

4 Cups Mexican cheese, shredded

1 TBSP Veg. Oil

1/2 tsp Salt

2 tsp Cumin

1 tsp. Cayenne Pepper

1tsp Oregano

1 can chopped Green Chiles

3 Cloves Garlic, minced

1 Can Rotel tomatoes and Green Chiles

3 Cans of Great Northern Beans (white beans)

1 (16oz) Sour Cream

2-3 Cans of Chicken Broth (depending on how thick you want the chili to be)

I purchase my rotisserie chicken already cooked and then pull all meat off of the bone. Place chicken pieces in large crock-pot. Place oil in pan and sauté chilies, onions, garlic, oregano, salt, cayenne pepper and cumin until onions are tender. Add sautéed mixture to crock-pot. Add great northern beans, Ro-Tel, and chicken broth. Cook in crock-pot for 3 hours. Add sour cream and cheese and cook for 30 more minutes. Enjoy!
